Nikkaluokta homemade lingon berry cake
Owen 200 C (392 F)
3 dl liter caster sugar
1,5 dl milk
4 dl wheat flour
3 teaspoons baking powder
2 teaspoons vanilla sugar
150 grams of butter
Lingon berries (if you can’t get hold of lingon berries use non sweet berries).
Whip caster sugar and eggs fluffy. Add melted butter, vanilla sugar, baking powder and flour. Mix and pour into a buttered ovenproof plate. Bake for 20 minutes. Add plenty of lingon berry jam.
100 grams butter
1 dl caster sugar
2 dl liter coconut flakes
Stir over heat until the ingredients thicken. Smear over the cake and lingon berry jam. Bake in oven for an additional 10 minutes. Let it cool and serve with lightly whipped cream.
